It’s National cake day, so it’s quite obvious we should be celebrating. 😉 Since I’m a chocolate addict, I thought I would share this easy recipe from Royal Baking Powder with you.
Ingredients:
makes 1 two-layer cake
- 200g butter or margarine softened
- 250ml (1 cup) caramel brown sugar
- 2 extra-large eggs
- 5ml (1 tsp) vanilla essence
- 500ml (2 cups) cake flour
- 15ml (1 Tbsp) Royal Baking Powder
- 2ml (1/4 tsp) salt
- 100ml cocoa powder
- 350ml milk
ICING
- 80g butter or margarine softened
- 500ml (2 cups) icing sugar, sifted
- 60ml (1/4 cup) cocoa powder
- 30ml (2 Tbsp) warm water
- 15ml (1 Tbsp) milk
How to make a chocolate cake with icing:
Step 1
Cream butter and sugar together. Add eggs, one at a time, beating well after each addition until light and creamy. Add essence.
STEP 2
Sift flour, Royal Baking Powder, salt and cocoa powder together. Fold dry ingredients into egg mixture, alternately with milk, until combined.
STEP 3
Turn out into two greased 20cm round cake pans. Bake in a preheated oven at 1800C for 30-40 minutes. Leave in pans for a few minutes before turning out onto a wire rack to cool completely.
STEP 4
How to make the Icing:
Cream butter and icing sugar together. Blend cocoa powder and water to a smooth paste. Add to creamed mixture, with milk, and beat to a smooth consistency. Use half of the icing to sandwich the two cake layers together. Ice the top of the cake with the remaining icing.
