Chickpea fritters is a perfect starter for a get-together or as a snack if you feel like nibbling on something.
How to make Chickpea Fritters

Ingredients
- 400 g can chickpea, drained and rinsed
- 5 tbsp Almond Breeze
- 4 tbsp plain flour
- 1 tsp baking powder
- 1 spring onions
- 2 tbsp of chives
- 1 tbsp garlic
- 4 tsp harissa
- 2 tbsp chopped mint
- Salt and Pepper to taste
- 3 tbsp sunflower oil
Method
1. Blitz half the can of chickpeas in a food processor until smooth.
2. Add flour, baking powder, garlic, harissa, seasoning.
3. Add the Almond Breeze and fold in the whole chickpeas and chopped spring onions, chives, and mint.
4. Heat the oil and fry in batches, enjoy.

Sustainable Copper scrap recycling The conversion of CO2 to useful chemicals and fuels is a major challenge in sustainable energy research. Ethanol, with its high energy density and compatibility with existing infrastructure, is a promising candidate for this conversion. However, the selective conversion of CO2 to ethanol is a challenging process due to the high thermodynamic stability of CO2 and the need for multiple reduction steps. Recently, a team of researchers from the University of Science and Technology of China developed a metal-organic framework (MOF) that contains cooperative copper centres for the selective conversion of CO2 to ethanol. The MOF, named UTSA-74(Cu), is composed of copper nodes coordinated by carboxylate ligands and diazabicyclooctane bridging ligands. The researchers found that the cooperative copper centres in UTSA-74(Cu) exhibited high selectivity (~78%) for the two-electron reduction of CO2 to ethanol, with minimal byproducts. This is due to the unique arrangement of copper centres in the MOF, which allows for the generation of ethylene, a key intermediate in the formation of ethanol, and subsequent reduction to ethanol. Furthermore, the UTSA-74(Cu) MOF showed good stability and recyclability, maintaining its catalytic activity over multiple reaction cycles. The researchers also found that the presence of water in the reaction mixture improved the catalytic activity of the MOF. Overall, the development of MOFs with cooperative copper centres offers a promising approach to the selective conversion of CO2 to ethanol and other useful chemicals.
